I wanted to get Blocter into the Warrior class, but because he leveled his basic herbs up ONCE, ONCE, 1 time only, he ended up falling into the Scout class. And I turned them off very soon after I was able to put David into a party.
Here you can find about "numbers", it's levels.
Should I just use a trainer to make things easier?

So these numbers refer to the skill group level? Also where would one-handed, power grip, and two-handed fall under out of all the skill groups: wield styles, weapon types, low mystic, high mystic, or item?
In order to become Guardian, those mystic arts must not become significant, meaning you need to disable them completely.
For healing you can use Rush's items (herbs). Those are supposed to reach at least level 6 at the time of the class change.
Which is your Rush's current class?
Becoming a guardian is really hard because you're more likely to become a Scout first, and if that happens, you'll probably be stuck in it past the point where you can become a Guardian. Guardian is probably not something you can do on a first run.
On the second run, never, ever use Herbs, only lotions... but keep your combat arts really high and don't use Mystics.
Class changes can only occur on advancing tiers, not sideways.
Your next classes (tier 4) could be Warrior or Fencer, but only if you train at least two wield styles. Which I would not recommend; for a first playthrough I'd recommend Power Grip, since some really good weapons for that wield style will be dropped for Rush later in the game (Serpent Star, Frostblade, Demonblade)
If not, then those two classes will be skipped and your tier 5 class will be Guardian.

Btw. level 6 in herbs is approx. at that point where you get Restorative Tincture

It's true that you have to be super careful not to become Scout. But even with Lotions instead of Herbs you run the same danger of them becoming significant to qualify for Hunter.
So I'd recommend to disable herbs completely once level 6 has been reached.
Can be reenabled, once the desired class has been achieved.
The wikia says:
"Higher than the average of the other skills in the category"
Categories are Combat, Item & Mystic
In RemnantAssistant (where I provided the link above), significant skills are highlighted in red.
For Guardian it's important that not Items are significant, but STR.
It's basically the same as Guardian, but without the Power Play Immunity (Critical Hits).
But you gain the Remedies, IMHO this class is still very useful, actually my favourite class for Rush for a first playthrough.
EDIT Yeah Cavalier sounds good, I'm considering going that class too
You qualify for an items class (which is exactly what you DON'T want to), if anything in the items column is highlighted red.
So for Guardian, nothing highlighted red should appear in the items column.
Just watch that items level carefully, after it has reached level 6, disable herbs until you have achieved your desired class...!
BTW, Guardian (and Cavalier among others) have the [Defender] skill.
It'll give you a 'Strengthen your defenses!' or 'Be our shield!' command.
It's perfect for tanking, but also for healing in case no healing command shows up (unfortunately this happens quite a lot). Just put your healers in position 4&5; they will reassess to healing as soon as the union is at low health.
