There is a little safeguard against losing your account completely to a sudden relinking, you can open the "Account" menu, open "Account info", which will give you your Sky ID – copy it and save it somewhere password-ish safe. Support might request it in response to a request about a lost account and I imagine it improves chances significantly.
Another weird quirk that Sky does not seem to explain very well is that you can't unlink an account and have it left with no sign-in methods. Not sure this is what you ran into with Game Center, but it's a common problem here when people accidentally create new Sky accounts on the PC version, linked to Steam, and have to relink them to throwaway Google accounts (commonly) before linking their main ones to Steam – because unlinking a blank account from Steam fails when it's the only link on the account.
I kept the Sky ID safe but I hope I never need it because I do not trust TGC at all.
I friend of mine basically abandoned the game because she had frustrating login issues with Steam, like the one you described where she couldn't unlink Steam and link it back to her device account because TGC is garbage.
I am now thinking of deleting the new account associated with my Game Center. It is clearly a new account with a different Sky ID and it has an option saying "Delete Account". That way maybe my Game Center will become free and can be linked back to my Sky account?
I read somewhere that Game Center is one of the accounts that you can't unlink from Sky (for some reason) hence why I thought of deleting that Sky account entirely in the hopes that Game Center will be freed.
So you suggest I make some throwaway Google account, link it, then hope that Game Center can be unlinked? I am afraid of making things worst because there's no logic behind TGC and their account linking.
I think no account can be unlinked from Sky where it's the last one remaining. Whether Game Center gets any special treatment I do not know, I'm not immersed in the Apple ecosystem at all.

I just made a Google account and I still can't unlink Game Center "Error: Not allowed to unlink this Sign In method".
I also am not able to unlink the throwaway Google account I just made (same error).
So you can't unlink Google or Game Center at all.
Already waiting for their reply. I am almost certain that they will do nothing. I went ahead and deleted the new Sky account hoping that after 30 days Game Center will be free. Will update in case someone encounters this issue in the future.
This trash company replied that they checked my account and that it was never connected to a Game Center account.
My account was literally connected to Game Center for 2 years and it was my login method because it was the most convenient. The reason? My iPhone device was always logged into Game Center and hence I was able to enter the game without passwords or pins, contrary to how I am forced to login now through Apple ID which requires a passcode every time I want to play.
Their reply to me asking if deleting the other Sky account linked (without my permission) with Game Center will unlink the Game Center account and let me link it back to my real Sky account, their reply was that they don't know LMAO. They also instantly closed the ticket, leaving no room to discuss this further.
So not only they can't help, they can't even see that my account was connected to Game Center for 2 years. Your account's safety is literally hanging by a thread at TGC, and they have absolutely no clue what to do, what is going on and how linking works.
Broken bookkeeping aside, they basically refused to link your Game Center account to your main Sky account and did not provide any instructions for you to do this by yourself? And didn't explain why unlinking is not possible?

They said that they can't find any records of my Game Center ever being linked to my Sky - which is either a lie or they simply don't have the technical power to see (hence accounts being at risk).
Not only did they immediately close the ticket, they offered no support and wouldn't even know if I my Game Center will be unlinked after 30 days from the deleted Sky account (the one they made without my permission) so that I can link my Game Center back to my one and only Sky account.
Their support is basically:
Paraphrasing your issue to show empathy and understanding.
Saying they are here to help.
Then state that nothing can be done and offering no solutions/alternatives.
Then they immediately close the ticket.
EVERY. SINGLE. TIME.
With the ticket closed the only recourse there is to file another, referring to older case number/ID to make it clear you've already tried once.
You're also doing this at a rather unfortunate time when TGC seriously borked their servers and people are launching the game into introductory cutscenes as if they never played the game.
Unfortunately, without pressure to actually handle cases I don't think their customer support will improve, so I encourage you to press the issue. I don't think this thread in particular will have as much effect.
I was faced later today with the introductory cutscene bug and as you can imagine I almost had a heart attack thinking that my Apple ID also had unlinked and my game progress reset, losing my account.
I will try to reach them again but I can tell you, I needed Sky support 6 times total and not a single time did they prove helpful. Always resorting to spamming Sky-lore puns (as if it is funny) and then saying they can't help/don't know - instantly closing the ticket.
UPDATE: They sent me a copy-paste response saying they have server issues and closed my ticket.
This needs more exposure. If I get unlucky and somehow my account gets compromised then boom. I lose my entire 7 years of sky. All gone with no way to restore it. Sky support refuses to help with account related issues unless money is directly involved (like an IAP).
This has been my experience so far. I still worry someday I'll get an issue and its all gone. All my firends, all my hours, all my purchases, gone and told "damn that sucks" *support has closed this chat*
Something to note is I somehow managed to switch my account from my old iphone gemcenter account to a google account. This was years ago and I can't remember exactly how I did it. I think it was only possible when sky switched from the testflight app to the app store back in like, 2018 or 2019. so it might not even be possible anymore. I really don't know.
