After you unlock them (the spirits) and reached the area temple the 1st time, they will appear at the starting area or the constellation stone at home/aviary village. You can then spend candles or hearts to unlock the cosmetic there. And near those areas is the place where you can change your look, they are hard to miss.

Technically there's no male or woman by design, you change your hairstyle to look like a boy or girl, though there might be more female cosmetic than male in this game due to there's over 70% female players...

I am not really active in the game enough to bring you on a tour since i normally just buy the cosmetic i want and skip the rest i don't like, so i don't really need to grind and stick to the game like others...
But there are a lot of veterans waiting around the village that may do just that. Go near those standing near the constellation stones near the gate/portal and try light them up with your candle and ask them for help should work.
