Odin should have been eaten by the Fenris wolf
Like in the myth. Its literally all set up perfectly and I was waiting for it. He dies anyway so what was the point in not having the catharsis of showing the most important God death in the entire Ragnarok myth.

I'd argue that the most important Aesir death in the entire Ragnarok myth is baldr.

Probably of equal importance, and the way they did it was interesting and ultimately faithful to the myth. Putting the all father in a ball and having a dwarf smash it is dumb.

In the myth, Loki tells Höd to aim the mistletoe at a deer, when it was in fact Baldr.
If I recall correctly, in GoW, Kratos snaps the neck of Baldur, after making him vulnerable with mistletoe, right? I don't recall exactly tbh.

Yeah but they tie in the idea of mistletoe being Baldur's vulnerability, and Loki being the agent that causes it to harm him. Its a clever nod to the original story. What happened to Odin is not clever at all. They painstakingly go on about not seeking revenge and not killing their enemies, only for Sindri to immediately take revenge and no one even try to stop him or look like they regret it. Its remarkable how unfocused the ending is.

It's not like Kratos and the gang didn't want to forgive Odin. Atreus, in fact, even asked Odin to let go. But Odin was just a stubborn prick.

About Sindri, I think it's meant to be an example for the story, on what will it be if you let the revenge consumes yourself. In contrast of Kratos and Freya, Sindri lost everything, even friends and people he once considered family.
