The stuttering is due to Unreal Engine 5 being a piece of crap so it's compiling shaders at runtime. Most games solve this by adding a shader precompilation step to the first launch but I've never seen a demo do that. So it is what it is and hopefully the full game will have that and won't stutter.

That being said performance is definitely not up to snuff even without the stuttering and for a 2.5D game this felt demanding as hell.
Having completed Prince of Persia the Lost Crown, and having played this ZAU demo, I have to say that ZAU combat and movement felt far inferior and made me appreciate just how good it was in Prince of Persia. Movement and combat felt smooth in PP and clunky in ZAU. The story and visuals were excellent in ZAU though. They do have different price points: PP was $50, and this one's only $20.
It's a terrible ripoff of an already terrible game.

I used a trainer to get through the second Ori game because I was so engrossed by the visuals and story, but as someone mentioned above, The Lost Crown's story isn't really anything to write home about and while I enjoyed the visuals, I wasn't going to bear it out for the graphics.

The trick to those puzzle doors is that you can place a shadow with one Sargon, and then teleport to it on the next Sargon.

Took me forever to realize you could do that.

There is 1 mega puzzle like those in the game that I've yet to put any real effort into.

it looks a look like trine with more metroidvania added on (in trine it is seperate levels)

consider looking at titles like trine or axiom verge they are (in my opinion) better versions of what you get here. If you have already played those this game is probably also to your liking
