You're asking for a lot. Nothing wrong with that, but the game doesn't deliver all that. I enjoy career mode for what it is. A world I set up and then have to edit every week to keep on track or to keep from getting repetitive, after I see what the game books. 70% (or more) of the booking work in terms of quality assurance... has to be done by you. If you play the game with this in mind, you will get the most out of Universe Mode IMO. Other people might just want to let the AI do its thing and see what randomness unfolds. That's fun for some.
I dont think any game has the ability to generate random storylines for you other than an AI generator like ai dungeon. But, thats just a text based roleplaying game where you talk to a chat bot, its not going to give you a controller and let you play out your fantasy in high def 4k.
So the only thing you can do is My Rise. My GM and My Faction both would require you to make up the story yourself in your own head and doesnt do much of anythin to help you along with that.
If you play Universe mode and play the single character mode, its a lot easier to make the story up. "He's going for the title, heres his first match. Oh no he got ambushed, now hes mad about it!" its not that hard, i'd be surprised if you wouldn't doing it already without realizing it.
So yeah, MyRise is the only mode with an actual story.
I hope one day they learn how to add an AI generator to their games to generate this stuff endlessly, the tech is definitely there, but I havnt heard of any gaming companies trying this yet.
