As for the reverse just before becoming stunned, this as always been the case. Just make sure you do a high stun move as it nears this point, this way it jumps full to stun without the reverse on 95%.
it was certainly not this extreme with the reversals until the recent patches. it has become egregious. I was just playing on 1.02 and had no issues; upgraded to 1.08 and suddenly the reversals from the AI are at least 10 times more and the reversal window for the player is way reduced (not as bad as how increased the AI reversal is but still noticeable).
If still struggling use lower game difficulty then boost AI. This gives a level between Hard & Legendary that may suite you.
Game satisfaction is all about Player preference and this years does have some tools to customise it to players own taste.
You can never make a game difficulty level that makes all players happy but as said you can customise to own taste.
Play around with the settings till you find your perfect spot.

You cannot adjust those setting inside my universe; you have to adjust them in the regular game menu; and I did. I have set to highest reversal window/mistake threshold for player and lowest for AI. These are the same settings I had prior to the patch and it worked perfectly fine. Something in the patch fundamentally broke something. It is so bad it is basically unplayable.
Sorry don't know what else to suggest. All works fine with difficulty settings in my game. Even have prompts switched off to make hard. The sliders do alter the game for me at the moment. You might be right and it broke your save. have you tried setting different save and compairing or use exhibition match to see if its the same?
As said you could set to hard or normal, if that feels to easy then boost AI players to make that mode more challenging and see if you like that
Yeah not sure what is going on; but I attempted some settings changes and played in exhibition and the same thing is going on. adjusting the sliders on the reversal windows does not appear to have any affect at all now. As far as I can tell none of the sliders are having an impact. Something is just flat out broke with the game settings.
It looks like the main difficulty setting (easy,normal,hard) still properly register; but the sliders on things like reversal settings and windows have no impact. Even on Easy they are reversing almost everything. I would say there are certain moves where the CPU will reverse it at least 75% of the time meaning you basically can't use those moves. Some other moves it looks like it doesn't reverse as much but it is just ridiculous to have moves reversed like this. totally breaks immersion and basically limits your move selection to half of what it should be.
