TBH, WWE 2K games never had any advantage compared to THQ ones until WWE 2K22, which had many improvements. The only pros WWE 2K had compared to THQ since WWE 2K15 to WWE 2K20 were only about to bring the game to PC, but since WWE 2K22, it was the first step of a WWE 2K game that got close to what a wrestling game deserves to be. Still, there are many features that need to be back since the THQ ones.

Most of the things you mentioned, like customizing rings, etc., already exist for Universe-Mode; I just expect developers to bring some score systems and rivalry between shows for Universe-Mode, like ratings, budgets, etc., or anything else that gives you the motivation to play Universe-Mode.
But to be able to play GM mode properly, you should be familiar with WWE real-show scenarios. WWE scenarios work like this: We have different classes of belts. There are two top-tier belts, like WWE World Championships, one for Raw and one for Smackdown. There are also two 2nd-class belts for single champions: Intercontender championship for Raw and United-States championship for Smackdown. And we have 3rd-class belts, which are tag-team championships, one for Raw and one for Smackdown.
Sometimes the Raw one is most valuable, and sometimes the Smackdown one is most valuable. For example, Brock-Lesnar had WWE Universal Champion before 2020, when the Raw was the most valuable, and then Roman Reigns took the smackdown world heavyweight championship as the most valuable one until today. The same is for women; there is a belt for each discipline, a world championship, a single championship, and a tag team.
1. The top-tier rosters will have World Weight Championships, like Undertaker, John Cena, Roman Reigns, Randy Orton, CM Punk, etc.
2. The 2nd-class rosters will get single-championships like The Miz, Kevin Owens, Kofi Kingstone, Dolph Zigler, and Kane. However, Kane used to be at the same level as Undertaker until 2003, but in a match with Triple H in 2003, he lost and was forced to take off his mask for the first time. After that, his role was reduced in stories, and he became a 2nd-class roster member and never became a great wrestler like Undertaker again.

3. The 3rd grade rosters are the ones who will win tag-team champions like the Uso brothers or judment day.
4. There is a lower-class roster called the "Jobbers". These rosters are mainly focused on the entertaining aspects of WWE shows, and they will lose most of their matches.
Despite the fact that these are all stories and scripted, the way rosters have wrestling skills is different from each other. Those who will win the World Championship definitely have the greatest preparation for it, and they practice better moves in the background. So story-writers will decide their career based on their wrestling performance and soft-skills like talking with a microphone. For example, Logan Paul was known as a YouTuber, but he definitely had the talent to be on the WWE roster and could perform great moves. "Chody Rhodes" used to be a 3rd class roster before 2010 and was a minor part of the "The Legacy" faction, but now that he has returned after 10 years, he shows a way better role and becomes a main eventer and one of the top rosters currently.
Just like in real sports, where some athletes have peaks and falls in their careers, in WWE stories, the same happens: there are rosters that will reduce their power and lose matches when they are close to retirement, like John Cena, Randy Orton, Brock Lesnar, and Undertaker. Definitely, when Undertaker lost his Wrestlmania streak to Brock Lesnar, it was the most heartbreaking and saddest moment of all time for me in WWE history.

P.S. I never watched WWE shows regularly after John Cena's retirement; the best moments of WWE were brought alive by two golden superstars: The Rock and John Cena. Since 1996 to 2004, The Rock was the motivation for fans, and after his quitting, John Cena came and kept this motivation from 2005 to 2018, after which we never had a golden star like these two again. Personally, my two favorite rosters of all time are The Rock and John Cena for their characters outside of WWE, and my most favorite roster is Undertaker for his character and wrestling style inside WWE. Each year that a WWE 2K game is released, I always pick Undertaker or John Cena for my first match.
