Holy, i did nature. Since the damage cap is per hit having lots of small DoT hits felt like it helped, not just with the endgame, but getting to the tournament as well. Side effect, and im not sure its intended, but apprentices casting nature spells NEVER spell reflect. You didnt have to worry about damaging yourself in the slightest when late in the game, and the already low damage per hit of the element barely came into play. Where spells like big bang are neutered, im not even sure pestilence is changed, let alone the lesser spells also being autocast
as for school, i dont think it really matters. For both i just used whatever schools i still needed storyline finishing/hitting 60. Speedrun would be improved with evocation to get to big bang faster, but i finished it with only nova and lightning, so it didnt feel necessary. Holy same deal, though evocation or enchantment would be strong choices i just did it with alchemy since it was left over
both challenges you can use the stun whip strategies also, so if you get to the final holy boss and it looks like you're not going to succeed, swapping gear to that will still end up helping
Yes for speedrun I went with evocation but for Holy I went with Enchantment I love the effect it's flag gives.
