I even made sure to specify in my post I'd like to try chill leaned-back Quake in my chair, implying yes I do play now on mouse & keyboard and would like this other option sometimes
But you'd probably be better off looking at the steam guide that lists all the cvars in the game as there's a ton of them that pertain to how the aim assist functions.
Failing gyro, that's probably your best bet.
Coupled with the fact, that there's a Switch port, i would just give it a try. If all else fails, you can just force it using Steam's built-in gyro-aim option when using it's Switch Pro Controller Configuration Support. Once you have it enabled and your controller is plugged in, you should see a "Controller Configuration"-option on the right side under the big green "PLAY"-button, when highlighting this game in your library.
Beside Steam having that feature baked into it's controller support options, that's a blanket statement simply not applicable to all games. It's common for VR games for one thing.
What kind of controls are supported is always a matter of what developers decide to support.
