Just a by the way, since you didn't like Quake 1... you definitely won't like Quake 2. It's even more slow paced.
But the "meat" of the game is actually not the single-player, but the multi-player and modding. To properly experience those things, you had to be into the game when it was still a big deal, so years ago. Newcommers to the game will never quite "get it", as they missed out on all the good things that it delivered in it's hay-day.
However, this doesn't mean you cannot enjoy it today, it's still a fairly neat game with a solid core and a fair amount of content made for it.
With that said, I would agree that Doom and other "2.5D" shooters are usually more enjoyable single-player experiences. As said, Quake was mostly for gushing over advanced 3D visuals, atmosphere, online "fragging" and modding/map making.
My 2 cents.
Edit: Oh wait, do you mean textures when you say graphics? Is this just a complaint about too much brown?
Don't get me wrong, I personally love Quake. But it does look like crap.
Don't forget rocket jumping, circle jumping, no vertical autoaim, levels that aren't just hallways or courtyards, a powerup that lets you kill enemies faster besides with your fist, the game was clearly designed around mouse use instead of keyboard use, implementation of TCP/IP for easier connectivity...
Oh ya, the rocket bounding boxes are gigantic compared to Quake, making many edge shots impossible.
I revisit the game about every 3 years but this is the first time I've did a more exhaustive hunt for textures, etc. What I found just this last week, and wholeheartedly suggest, is The Quake HD Pack over at Mod DB ( https://www.moddb.com/mods/quake-hd-pack-guide ). It uses the Darkplaces engine (comes with it already) plus it's a mod collection, including hi-res textures from The Quake Retexturing Project (which is also listed on the DP download page), better particle effects, improved torches, real-time lighting, and more.

Quake is definitely way slower paced than Doom and Wolfenstein though. It's meant to be a horror shooter -- all of those crazy speedruns you see on Youtube and stuff are from basically years of practice.

The top speed in Doom is actually a tad ridiculous for many indoor areas (especially when bichording), but feel just right for large outdoor areas I suppose.
