The online just means your friend doesn't have to be in your house. Stardew has online coop. Where's the in game purchases and huge price hikes since Stardew added coop? Online coop doesn't mean they need to host dedicated servers. It is just code that allows you to connect to a friends game over the internet, instead of couch coop, which is split screen in most cases, with Online coop you each are on your own devices in your own home with your own screens.
Local coop means you play on the same device and isn't as good an experience. Relying on Steam's remote play isn't as good as native code in the game.
