If you just progress through the star chart together there will be a ton of content you can play coop and you are unlikely to run into anything solo.
You'll want to complete the solo quests anyway so do them too. Several (silver grove and sands of Inaros come to mind) have solo components, but require farming between quest missions you can share in coop to progress.

Almost all quests after and including The War Within (literally all Main quests but also some Side Quests) are Solo-Only. If you only want to play it with someone else and have zero interest playing it alone (my spouse is like that with this game), then once you get to The War Within, you'd better start looking at the Wiki to see what things are solo-only to avoid those ones, and focus on the side quests (or endless grinding if you enjoy that) for your enjoyment.
