I suppose in the meantime I'll learn which other pitfalls to avoid, and treat this as my first iteration of the time-loop. :-)
Edit: I had the dialogue option to confess attraction to her, but when I went to the mall to talk to them in-person I could start dating Amir but not Eleanor. (This is despite me never having bought anyone else gifts, except for her. From this I can assume that dialogue options carry more weight than gifting.)
I'm pretty sure it's just that Arthur and Eleanor have higher chemistry requirements than others to date. I have the option to date everyone except Eleanor and Arthur, despite not really going for anyone in my dialogue choices, but I kept leveling everyone at the same time.
