As for hoarding stuff: do whatever you feel like doing, really. I'm still having my Veldt and my Hystrix even though they're easily outclassed by the rest of my arsenal.
But @Pakaku is also right: if the stuff is trivial to get and you haven't put any forma or potatoes on it, you can just sell them for space and retrieve them on a later date.
Also, looking at the things you listed: whilst the Prime Variants of the Boltor is hard to get, Paris Prime is afaik in permanent rotation, e.g. the relics never get vaulted and you can easily upgrade it. Same goes for the Kraken: if you haven't engaged with the Kuva Lich system yet, this might be your motivation to get the better version, the Kuva Kraken.
It really depends on your in-game budget. If you're hurting for plat and slots, I would keep only a few of your best items for different situations (say, a sniper, a shotgun, a bow, an automatic rifle, a semi-auto rifle, and a launcher) as well as something that is a favorite if not really the best in anything. And also worth keeping in mind those items others mentioned that can be used in crafting something else

But even more so that you can name weapons. My mains are all named Stupid Prime, as they are quite stupid, indeed.

I usually tend to sell weapons once i get their superior counter parts. If it got primed, kuva'd or tenet'd - thank you for your service, but it's time to say goodbye.
For me I try to keep one of each weapon. Sometimes two from the same family of weapons like Cernos Prime and Proboscis Cernos since they are different enough. After that it just comes down to if you want to keep said weapon yourself. No need to horde them if you don't care.
