Abilities will work exactly the same, albeit with tweaked metrics.
You can go to the helminth and see all the abilities you can subsume. Just look for it in there, it will tell you what it does.
Chroma can change elements that his abilities using DURING the mission. Other warframes can't do that. You have to choose the element through Emission color and stick with it until the mission is finished.
it is very straight forward but yeah.. there're some green hues wich look to me like blue... but they aren't so whatever.....
in terms of the usefull ness..
we can all pretty much agree on the fact that the toxin form is pretty much useless.. or mostly unused
since smaller shield values are generally better than bgger shield values .. you won't see much use of the lightning form either.. there's this wonky hildryn build wich uses it.. bugt that's pretty much it.
for cold and heat.. it kinda depends on the frame and arcanes you use in your setup.. but 99% of the time one of the elements is just better than the other one
for example on a frost you kind of wanna give him cold to buff is snow globe... but in some cases where you wann turn himself in a damage sponge you might want to use heat..
or as inaros.. heat is always better
so yeah you loose the "versatility" but you don't need it tbh......
Subsuming Elemental Ward is relatively cheap, so try it instead of asking several times.

do you even understand what this multiplier multiplies? ... and how bad it is.. almost everywhere?
