200% crit chance only gives you (1 + (crit multiplier - 100%) * 2) damage guaranteed.
With 250% chance, you have a 50:50 chance of either getting (1 + (crit multiplier - 100%) * 2) or (1 + (crit multiplier - 100%) * 3) damage.
You can go up almost indefinetly, if your build allows it. There is no cap to the effects of crit chance.
From yellow to orange crits, the effective critical damage bonus (shown multiplier -1x) is doubled, but not the whole damage.
From orange to the first red level, it's only another +50% in relation to orange.
If you want to make good use of read crits, you must make sure that your crit multiplier is as high as possible. A 2.0x multiplier is exactly TWICE as strong as a 1.5x multiplier, and a 3.0x multiplier is once again TWICE as strong as the 2.0x multiplier.

If that weapon were to have a Critical Chance over 100% it would be capable of achieving level 2 crits and they would have a multiplier of 10.4x, and if that weapon reached a Critical Chance over 200% it would be capable of level 3 crits dealing 15.1x damage."
In short, the more the better.
