Correct. Mining/Fishing is all pretty much client-side. Capturing animals is shared, but only with nearby players.
I always though it was interesting that the maps are basically the same amongst the team, yet differ on fish and rock/gen seams (and some loot).
Same goes for killing them in general, shooting into the water. Can both kill and scare off teammate fish despite being unable to see them.
Because you see, even if they're client-sided, AOE abilities still can destroy their fishs
