So how do you find the Acolytes?

It just says to look at your solar map?

Use the drop down menu thingy on the top right of your map where you can find alerts and invasions. As for their exact location you need to play missions, if an acolyte appears, the location(mission node) will be shown for everyone. Or just wait other people to find it for you :p

A red enemy marker will automatically show up highlighting the Acolyte's location after they spawn. At that point, you just have to deal damage to the Acolyte until it flees (it will drop one of its mods as it leaves, but which mod you've gotten isn't revealed until you finish the mission and extract).

Why is Angst at 71% Health then, but Location: Unknown? Clearly that looks like people have found and are damaging it. And I've got the entire starchart unlocked except for a few remaining Kuva Fortress ones I've just been lazy about, so I don't think it's that...

Acolytes don't stay in the same sector for long, they change the location every few minutes and we have to find it again.

Because the health that you see on the Navigation is that specific Acolytes remaining health overall before they disappear and won't show up again. Basically is like how the Fomorion or Razorback Armada works in terms of health and I know this for a fact because this is the third year I've done Acolytes. They also change locations every so often so you have to find them again.
