Sorry I can't be of more help. Watch a Let's Play or something, maybe, since it won't be required to be as succinct (ergo, lacking the exact information you need) due to it needing to be compacted into a quick-read, bullet-point text format for the A.D.D.-affected.
Also, the quests aren't necessarily derailed, as you put it, especially in the circumstance of a key storyline quest. What you would have done is perhaps exhaust one potential solution (as there are many solutions to many quests, not just one; your quest most certainly would not be hanging had you lost the game of rock, paper, scissors). Have you searched Esmeralda's basement and belongings? You ought to do that if you haven't. She is a primary suspect, after all.
-get the love letter out of the chest at the murder scene
-get the bloody knife out of Esmerelda's basement
-get the book "How to commit the perfect murder" out of Esmerelda's basement
Pick the conversation options with Esmerelda relating to each of those 3 items.
That's it. It makes no difference how you deal with the mortician.
Well the problem is that you can have evelyn arrested without doing that. I think I did the first 2 thinking it was flavor text and then went straight to the captain, never knowing i was sealing the quest line by doing so. And the mortician is at least needed for the sheep quest to be completed.
Esmeralda getting arrested doesn't derail the quest. It's an obvious possibility, after all.
You don't need to finish the sheep quest.
You seem to be focused on the idea that if you don't finish a quest there's something wrong with the game.
The game is in fact designed such that the decisions you make can result in quests becoming impossible to complete. They will then sit in your quest log forever reminding you of your failure.
And that's ok.
