Seriously though, make a choice and live with it. Why ask people who are bound to disagree --- and may have little in common with you as far as game interest/time etc.?

You only have time to play one? Then better dont play them at all. All 3 are long hard like your manhood when you meet sansa exclude the "long" part. But if you insist on playing then DS1>DOS>DS2

Well at least you recognise my ASOIAF reference. I do have time for one but do not want o invest it all or i will feel like I have invested it in none. I perfer to focus on a game and experience it rather then playing everything at a time

In term of experiencing: definitely Dark Souls. In term of fun and brainpower: Divinity. And if you want to poison a certain someone with boredom, cheese build and lags, then Dark Souls 2.
