This fight becomes very manageable with a steady supply of summoned fire elementals, use them to tank the 3 fire mobs, 2 dogs and skeleton and harrass Evelyn with them.
Crowd control and take down the big demon and then the mage, cc the skeleton lieutenant since he will summon an archer, you want to get the 3 fire mobs to have aggro on your fire elemntal(s) their fire damage will heal your fire elementals and they will be very effective tanks in this fight.
After the mage and big demon are dead start beating down evelyn, and keep the skeleton cc'd, the dogs have very little hp so you may want to damage them down to make things more reasonable.
Then get evelyn down, the trick is to use at least 2 fire elementals to force all the mobs to aggrom them allowing the rest of your party to cc and focus fire effectively, The AI makes the very possible, evelyn casts either shadw or fire damage so they can tank her fairly well. The only real thret to them is the big demon which can 2 shot them so make sure to burn that guy down fist and make sure he is cc'd while doing it, I split one fire elemental of evelyn and one on this guy initially to help take the demon down faster.

Then proceed to use your area skills and win the fight easily.
EDIT: You teleport her before she starts talking to you, this will force the dialogue to start.
1. Set an Ooze barrel on the stairs leading down to her.
2. Used a caster with Teleport to pick up the barrel and toss it at her. This initiated combat.
3. The poison spread all around her immediate area where she summons her minions, disabling her from summoning. She tried, but was unable to do it.
4. Tank and spank.
She did manage to summon only the large Demon just on the outside of the poison pool, but she was unable to summon anything else. I suppose this is because the AI will not allow NPC's to voluntarily walk over surfaces that will harm them, and as a result, they couldn't be summoned in on top of it. I don't know - perhaps it was a bug, but I'm happy with the results nonetheless.
I initiated combat from the point at which the stairs bent by laying down a midnight oil at her feet. She started slowed and summoned her friends in. When her turn was over, I pulled back around the bend in the stairs and laid a midnight oil at the gap between the rubble and the bannister. Because there was no clear path, all of the melees skipped over their turn, with the exception of the Charred bones melee who summoned an archer in. The archer, Evelyn, and the other mage made their way up the staircase. I proceeded to damage them as much as possible, while laying down extra midnight oils at the bottom of the stairs, in case the one I'd created at the bottleneck got ignited (which it did later). I was able to kill the mage and the scout quickly enough. Evelyn was a bit harder, but I closed with my melee character, hasted him and just pounded her. Once she was dead I moved within range of the melees (who still weren't doing anything thanks to the oil slick blocking their access to me) and teleported each of the explosive hounds next to the demon, who died. Then I picked off the fire skelly and was done. Note, I did this under level (level 5).
There is an easier but cheesier method, too, to get her positioned like that. Only one character is locked in dialog with her, but you can still switch to the others. The others can do anything, and she will not react - even if you teleport her around. You could basically put her anywhere on the map, as well as moving your three non-talking characters into optimal position.

I have a lone wolf 2h melee and I found her to be easy. However, when I tried to beat her with my friend on coop, we had a lot of trouble.
