It depends on which port of Doom you're using.
Chocolate Doom allows you to set the sound options from a menu, like the original MIDI music or if you have the files you can set it to whatever you want, and then you can save the settings and play, while others come with specific versions of the music automatically enabled.
Or maybe you're talking about PlayStation Doom? That had a completely different soundtrack and sound effects.
My own favourite for PC Doom is Roland SC-55.

You're simply using a different sound system that you used back in the day. DOS games such as Doom, Duke Nukem, Warcraft 2 had several different version of the soundtrack to be compatible with different soundcards of the era. Some soundcards would only play very simplified versions of the songs while others would play far more complex MIDIs. If you use a source port such as GZDoom you can actually pick what version you want.
The music is the same, but will sound different. That's why it sounds off to you. You just have to select the version you are familiar with if you want.

Did you previously play the PS1 version of Doom or Doom64? Because they changed sounds, lighting, levels, monsters, etc when they made those versions. Doom64 is it's own game, whereas the PS1 was edited (heavily, but less than every other version) when they ported from PC to PS1.

If you are using DOSBox, make sure you at least remember to set all the sampling rates to 49716 inside the conf file.
