Jumping
For everybody wondering how to use the jumping arena, I suppose it refreshes everyday! Today's options are jumping area with Blaze or eventing grounds with Tati. To set up poles in the area you have to be on foot in the big arena and set them up before getting on, the poles are in the corner.

you can put up poles while being on Blaze in the big arena asw! :)

I cant seem to put up the poles aswell. Neither from horseback or on foot

I got riding lessons two days in a row and uninstalled for nothing more to do. Reinstalled today because someone told me it's real life days when it changes. Still getting the basic riding lessons. I know it's EA, but this feels more like a gameplay proof of concept.

Don't get me wrong, the riding mechanic is groundbreaking and I'll happily wait for the finished product. But.... I expect a little more from an Early Access game tbh :(

The riding lessons are basically a tutorial on how to actually use the mechanics of the game, other than that it's nothing more than a tech demo thus far. In order to ride Tati and Blaze outside of that you simply have to enter each horse's stable and interact with it there. On the stable notice board is a poster that says which horse can do what on that day.

There are two different riding arenas, the jumping arena and the flatwork arena. On the flatwork arena you can set up your own courses with cones by entering it on foot and going to the corner where all the cones are, there should eventually be an interaction available to create a course. Then once you've finished and saved the course you can enter the flatwork arena with a horse PROVIDED IT IS AVAILABLE THAT DAY and go into the same corner until the interaction is available again to choose a course to set up.

In the jumping arena you can't set up your own courses, but while on a horse you can go over to the corner with all the poles until an interaction comes up and then pick one of the premade set-ups of different trot pole patterns.

There is also the XC grounds, where you can jump either horse to get a feel for the jumping mechanic, that is all the jumping there is in the demo right now.

At all three locations you can also always try out the dressage moves. To find out how the dressage mechanics work you have to open your inventory (or the main menu while on horseback) and read the dressage book, the mechanics are explained in there.

the riding lessons don't change. the daily activities you can do with blaze and tati change daily. more lessons will come with the next updates. right now all you can do are the three riding lessons and the daily changing rides with tati and blaze.

remember this is the FIRST build of early access and it's FREE to play. this first build was streamlined because the dev (only one person) didnt want to get overwhelmed with bugs. there is much more content (just check patreon and the steam storepage or the free demo) waiting already.
