Ezerhorden is extremely difficult without magic. You absolutely want lightning bolt rings for this fight so taking the money route and rescuing the gnome village will give you access to lots of gold and the ability to buy said rings. Pick up earrings when you get the chance as that will also boost the damage of any spell you use including those from rings.
And lastly you'll want a lightning rod if you can get one from the hellhounds. Taking the village route instead of the forest after the airship fight has the best chance for one. If you don't get one, it's fine, you should still have enough money to buy 9x lightning rings as well as those you pick up as you go.
Trying to melee it? Forget it, I don't have any strats for that and even if you ask an expert that can kill it in melee without magic, they have an extremely difficult time trying to explain that process. Stick to magic rings.
Make sure you cast the rings correctly. Your shadow should be on the level as the boss' shadow and not below or above the boss. Stay as far away from the boss too. Boss has iframes after magic so don't spam it to death or you'll waste your rings. With earrings and lightning rod, 4 to 5 casts should end the boss.
Synn on the other hand, you have about 2 and a half screens worth to fight her. Don't rush your attacks, your best dodge is actually moving up and down and you'll want to memorize which attack is which. If you can beat the optional dragon boss then you can beat this just as easily.
As per the Synn / Red Dragon fight, there is not any issue of attacking using melee. You mainly need to have situational awareness of when the attack is coming and being able run/slide/evade them which Sigma explained above. You could also try blocking the claw attack as well.
Sorry, maybe i've been missing something. Where in the gnome village can i buy lightning rings? I have visited that place several times and never found anyone claiming to sell rings before.
You must of missed it. You need to go into the house to the right first, then exit, then go to the left house.
