Max Amount of Customers?

So I realized once I reached fall, I went from 6 to 7 customers a day, but now I'm in spring and I'm still at 7. Will I ever get more than 7 customers a day?

No, it stays at 7 from then on. Some older games would allow 8 customers at one point, and the older To Go! games (pre-Scooperia) were inconsistent, some games allowing only 6, some allowing 7, and some even allowing 8 customers at one point. As of Scooperia, up to 7 customers can come in one day.
