Not sure about 6 though since AR got reduced to drones, but look fun regardless
4.1 is consider by many to be the highlight of the series. 5 is similarly good and has quite a number of QoL improvements for the different classes, although personally I felt like the missions in 5 didn't feel as "fresh" as 4.1.
But if you can only get one, 5 is highly recommended because it is the direct prequel to 6 in story. While I feel that 4.1's missions are slightly better, its in an alternate timeline and doesn't lead into 5 nor 6.
I can't recommend the 6 without recommending the 5 and 4.1
Just to mention my experience.
I played around 1600 hours of EDF 4.1 on PC
I played EDF 5 for around 700 hours, but most of the hours ended up being on PS4, as I didn't have the patience to wait for it to be released on PC. It took too long.
Looking forward to EDF 6. However, I think I'll focus on playing this one on the Playstation anyway.
There is still grind involved, but they tightened up curve on what gear drops on what stages per difficulty on top of the "Every class gets stuff" makes even playing alone less awkward in 5 than 4.1.
Higher difficulties DO have better drop tables in general, but with your entry level start in stats you should probably stick it out on 'normal drops are more boring' until at least after the traditional million billion enemy drones mission before seeing how many missions you can attempt on hard out the starting gate.
Loot and health is universaly unlocked between both solo and multiplayer. the only split between solo and multiplayer is your unlocked stages (MP skips some tutorials and ads a handful of MP only stages). If I remember right, trying to solo online scales it up to 4 person party enemy values so uh... yeah. Don't try to solo online without knowing that.
With the vague shrug of a USA release date for 6 still, EDF 5 is the best jumping on point for a newcomer right now.
4.1 is still great. But 5 does honestly have less "Regrind old missions to beat the campaign on normal/hard the first time" than 4.1 , and is more encouraging to trying new classes partway through.
I can understand it 'more' for shorter games that emphasize story, to play them back to back so you can see the story continue. In this case, you either end up hating the second game, or things that happen in the second game can make you hate both of them, even if you originally like the first one you played.
So, basically, my suggestion is to just wait for 6. Sure, you won't know as well what you are getting into...but on the otherhand, you won't know what you are getting into, and when you do, you'll probably like it-so why waste that moment of "excitement" on the previous version, when the new one is waiting around the corner.
