If you want modern engines with fair graphics, I highly recommend you get a source port that supports a high resolution and can run on modern operating systems without the need for emulation. ZDoom is the most popular. DoomRetro is also nice.
You are right, using the default engine (not BFG Edition) of Final Doom does suck......which is why people have made source ports like GZDoom....to make it work better on modern systewms than what DOSBox can provide....
Here is a source port. If you cannor follow the simple instructions on hoe to set this up...I will gladly provide instructions...though they are not that complicated.

Mention that you can play many other DOOM mods. Even the Sequel Plutonia 2 is a free mod.
I agree with using the mods however and not playing through Steam since it sucks. What bugs em is Steam won't give anything as compensation for this. I still have Final Doom collectors edition on cd still and it runs great up through 7 and 8.1. Havent' tried it on 10 yet.
Like others have said if you want the great graphics you'll need to port it out and play outside of Steam.
If you want to play Final Doom the old way...it is sold exactly how it was originally played (through MS-DOS which requires DOSBox to emulate). Technically you really do not need any external mods (source ports) to play it...You simply need some DOSBox know-how if you wish to play it the way it was played back when it came out....The source ports (external mods) are useful for improving graphics and gameplay with a mouse and keyboard.
True to an extent but it still crashes horribly cosntantly even though when sold said it was for x operating systems which wasn't true yet odler stuff like Final doom etc ran under x operating systems just fine. That's my issue with it that they sold a non working Steam version that made you run it externally.
Having already owned all the old versions I could've simply used them with Zdoom etc if I wanted to run them outside Steam but instead bought a non working poroduct.
DosBox isn't a source port, it is a DOS emulator. By default the DosBox .conf file in the Base folder of Final Doom has the emulated memory set to 16MB of RAM...and honestly you can (and should) set it to 64MB by using a text editor to edit the file. I also recommend at least buying DOOM 3: BFG Edition if you wish to experience the original Doom and Doom II on a modern system the way you are describing it.
Somewhere I've stil got all my old discs of all teh Doom games including the BFG edition but sadly can't find them. What I hate about this is that it's no dfiferent than teh Gauntlet remake they did for Steam. When that 1st came out you have to set the video to the lowest settings to get at least 8 fps despite teh fact it was sold as being able to run smoothly, the same is true for this version of Doom. It wasn't what was advertised.
The version of DOSBox Steam uses for DOS games does not work correctly on some systems.
The versions of the engine on Steam are the DOS versions, not the Windows versions which came with The Depths of DOOM Trilogy and the Collector's Edition.
Also keep in mind that the WADs in the BFG Edition are not the original...they have some graphics censorship (red cross on health packs, Wolfenstein secret level graphics).

They work perfectly fine with the recent updates to ZDoom and GZdoom.
