Come to think of it, who in the GoT universe is really Good? Maybe noble Ned Stark? You could argue Jon Snow is a CG Ranger type. But this is not Middle Earth. It is a morally dubious world. Let's face it, even our favorite characters are not really good. I mean Arya is a freakin' Assassin. Daenareys is LN, converting to LE, NE, or even CE in the end. Mellisandre is pure LE. I guess you could say Brienne is LG and Sam is maybe NG?
But here is the reason for my comment. If you are going to do this, make SURE you give him a great custom portrait! Do it right!

The build is the most difficult... i.e. class I think i agree with you though.

I think Centurion might have a better idea with keeping Bronn as a pure fighter, but I always saw Bronn as a rogue, the type of guy that would creep in to an enemy camp and cut some throats.
If I look for a dual berserker - thief for Bronn.
why is evryone starting at Berserker and not thief ?
Because a Berserker gets 1d10 HP per level and a thief only gets 1d6. Also, when you dual you stop gaining abilities in your old class. So, when a thief duals, they no longer gain any points in their thief skills.
But you can also choose other combos giving some points to power more than RPG, but if you plan to play BG2, consider that a dualled character will be a thief 35, actually a thief more than a fighter.
For the same reason you couls choose to maximise stats instead of giving avarage values, but that's up to you.
Swashbucklers should be very elegant fighter...it fits for abilities, but it doesn't seem to suit from an rpg point fo view IMHO.
