If im playing goody goody, I usually have:
MC: Always some kind of fighter or thief.
Imoen: I always turn her into thief / mage at about level 6
Branwen: For heals and off-tanking.
Minsc: I never feel truly "good" without him.
Dynaheir: If she starts to annoy me I'll find a *cunning* way to replace her.
Xan: Not sure why I bother him... It always gets kind of hopeless at this point.
Minsc/Dynaheir combo - Mainly just do it for Minsc to be quite honest. He's a good bruiser, tank and he's also one of the only characters in the game that's got enough dexterity and strength to be able to use a Composite Longbow, meaning he can be used as an archer, in case you feel like you've got to many melee characters. As for Dynaheir, she'll be your main mage. Not much else to say.
Yeslick - Multi-class Warrior/cleric. I like him as, compared to most of the other clerics, he's a pretty tough guy. And he can be a pretty good off-tank, if the situation demands it.
Imoen - I think she's great, as once you've reached the levels required for efficient lockpicking, and trap detection, you can just dual class her into a mage. (Alt; if you want an archer thief, you can pick up Coran instead. He can use longbows, and packs quite a punch with them)
Your last pick will pretty much depend on how you want to complement your main character's class. Your picks are pretty much either going to be Ajantis(Bruiser/tank) or Kivan(Archer/Bruiser).
Alternatively, you can ditch Yeslick, and the Jaheira/Khalid combo to fill up the last slots. But keep in mind that Jaheira is *neutral* meaning you can't max out your reputation. Seeing as Jaheira is a fighter/druid multi-class, and Khalid is a fairly good archer, this would probably be an very similar setup to using Yeslick and Kivan.
In my experience, this setup is pretty much optimized for either a "pure" cleric, or "Tankish" fighter. (High constitution, Shield+Sword style) main character.
The party can be fairly good for a mage main character as well, granted you're using Coran instead of Imoen.
Jaheria, Khalid, Imoen, Minsc, and Dynaheir. My favorite PC is a multi-class Fighter Mage. Elf of course, haha.
Having played it so many times, I get tired of the canon party and like Viconia, Branwen, Yeslick, and Kivan as subs for Dynaheir and Khalid. I almost never drop Minsc or Jaheria.... and Imoen is always a party member.
When I get and play the EE version I want to sub Neera for Dynaheir and Rashaad for Khalid, but waiting for the mods Unfinished Business and NPC project to be available for the EE version. Cant play it anymore wthout talkative NPCs =)
just in case you don't know; in the EE version, you can start a multiplayer game, and create six characters exactly how you want. then just play them all yourself. you just start the game through the multi player button instead of single player one whenever you log on to play.

Cavalier
Preist of Lathander
Thief (which i will dual class to something once i transfer over to BG2EE)
Jester
Fighter(Archer) which i will dual class to Mage at lvl 8
Sorcerer
if you want to do the new NPC quests, just only load 5 of the 6 characters when you start the game and it leaves a spot for Neera or whoever it is you want to take.
are there 3 NPCs you just can't live without? then create 3 custom characters however you want in multiplayer mode and just use them. etc. etc.
like you i have played this game for yeeeaaarrrs so rolling with a full party of 6 that i create opens up SO many composition possiblities it makes it tons more fun for me.
I would like to add that you can also copy the saves from "mpsave" to "save" to convert them to single player.
It showed all 6 characters in the Default Player (You) slot, but I couldn't see any way to select them or make them available in the game. I clicked around on the gear icons, and the party member icons, but I couldn't make anything happen.
Any help would be much appreciated.

That was written in 2013, but neutral aligned character don't leave the party, if the reputation gets too high. They would only leave, if it gets down to 1. Page 44 of the Adventurer's Guide.
MC - pure fighter, two handed sword. Tank #1
Minsc - dual weapons, ninja-to and scimitar. Tank #2
Imoen - pure thief, short bow. She's nearly level 8 now and I just wasn't comfortable dual classing her cuz I'm a noob.
Coran - the master archer with a composite longbow
Dynaheir - mage #1 with a sling
Xan - mage #2 with a fire sword that he hardly ever uses.
I'm playing on core rules difficulty and hope the game gets harder once I get into BG city. I've been thoroughly exploring every map and doing every side quest I come across and it's been too easy.
I've been hoarding potions and wands to the point of never using them. During combat, I enjoy hitting the space bar and micro managing battles more than necessary. I haven't even needed to abuse the rest system cuz I also kind of hoard the mage spells.
I'm loving this game. It's nice to finally see what all the fuss was about.
Imoen - thief, with maxed Open Locks and Find Traps; short bow and dagger.
Khalid - tank, fighter; mastery in longswords.
Jaheira - healing/buffing; sling and quarterstaff.
Minsc - ranger archer; Deadshot and magical arrows.
Dynaheir - evoker, nuke mage; Evermemory and The Amplifier, loads of damage spells.
I don't dual-class Imoen to mage. If I did, it would be after maxing out OL and FT, which is at level 7. However, again I normally don't do this and if I did, it would be if the MC was a thief as well.
Does using him as ankheg food count? No? Well, okay then.
I do, usually he's the only two-handed sword wielder in my group... unless I'm using Minsc, in which case Ajantis gets to use Bastard Swords instead.
Decent melee stats and high CHA makes him a good party leader.
Otherwise I'm using these fellas more often than not:
Kivan (to dual wield scimitars & archery)
Coran (best archer, hands down)
Imoen (Detect Trap & Pick Locks 100, I usually dual her into Mage)
Yeslick (strap on DEX gauntlets + self-buffs and you've got yourself a sturdy frontline tank)
Minsc (Ranger, Tank - Two-Handed Sword, Long Bow)
Imoen (Thief, Dirty Work - Short Bow, short sword)
Branwen (Cleric, Healer - Sling, mace)
Dynaheir (Diviner, Wand user - Sling, darts)
Dorn Il-Khan (Blackguard, Monstersmasher - Two-Handed Sword, Crossbow >Equipped with Helm of Opposite Alignment<) :3
