You can improve the UI and give BG widescreen, but you'd need to mod the original with BG2's UI and use various other mods to improve/fix the game. Now, if you've never modded BG before it can be a bit daunting, and could cause you a few problems if you do it incorrectly.
In my opinion I would go with the EE; the new content is nice for the extra cash you'll spend, and it'll certainly save you time and effort having to mod the original game.
There'll be some that pooh pooh the idea of going EE first, and that's perfectly fine; the original is, of course, the true vanilla experience, but the EE just gives those quality of life adjustments that makes things ride smoother.
Be aware that there are a few bugs creeping around the EE (I've not encountered any, but there are some that have.) Now, the game is still being worked on, so any bugs will hopefully be squashed soon. That said, there are a few bugs in the original game when running it on a modern PC (which the EE aimed to fix) so it's swings and roundabouts.
It's up to you, but in my opinion go for the EE. One final note; BG2 is by far the superior game, so if it's a choice between 1 and 2 go for 2, otherwise play them both with the same character all the way through.
As a vanilla experience BG:EE is definitely the way to go. The UI readability/usability will never be as good in the orignal BG no matter how many mods you throw at it. Game seems fairly stable and the only bugs I've noticed are the are journal related (quest not updating properly).
Mod support will come in time. Right now some really great stuff already works such as SCS II (an amazing combat enhancing mod that is perfect for you second playthrough).
I was a bit on the fence before, but now I've made my decision, I'll go with the EE. Is it safe to assume the same goes for BG2 as it does with the first game?
There's also more content with BG2:EE - all the new NPCs from BG:EE return with long quest lines, as well as a fourth new NPC. I believe there's less items added in BG2:EE, but it's not a major problem.
Furthermore there's the 'Red Button of Awesomeness', more commonly known as the mass loot button. Basically you click it and it shows you all the loot you can take from defeated enemies around you, which saves SO much time for you. It's such a quality of life improvement.
Because BG2 is almost universally the more beloved game of the two, you can tell the Devs put more effort and love in to it. The area designs are improved over the first EE, and the writing for the new NPC is brilliant (in my opinion).
The drawback with BG2:EE is that because it's only been released little over a month ago, there are more bugs than in BG:EE. Hopefully they will be fixed soon, after the holiday period.
One more point is that there are many more mods and such compatible with BG2:EE than BG:EE (again, because BG2 is more beloved, so more people wanted the mods to work straight away with the EE's release.)
