The blind spell is my favorite spell, if you can manage to blind the archer he won't be able to shoot at you. You can blind the mage as well but that will take save loading because mages have a low save vs spell, which gets kind of cheesy with the blind spell as every fight in the game becomes nearly trivial.
Arrows of detonation are a staple of this fight for a lot of players if you haste a fighter type he can do 24d10 or so damage per round. or maybe it was d6? I forget, regardless if you've got 3 characters that can use a bow a haste spell and some arrows of detonation you can outright murder the fight.
The slow spell is pretty awesome as it gives your opponent a 4 point penalty to armor class and a 4 point penalty to his 'to hit' rolls as well as reducing his attacks per round. It's a massive boost. For multi-class mages stacking it with improved invisibility, haste, a potion of storm or fire giant strength, and a potion or two of magic resist plus stone skin and mirror image will let you solo sarevok provided you maxed out your hit dice rolls when leveling up.
Protection from evil is important as well, another 2 point bonus to your AC. Protection from elements, or fire are useful cleric spells. Chant, & bless will let your fighters hit more often. Also finger of doom -2 to your enemies attack and saving throws, very useful because it makes the blind spell and the slow spells more likely to stick and there is no saving throw against it.
I've seen a few videos where people just hold back and nuke him from behind the seal. Seems to work pretty darn well. But feels a little cheesy since they can't fight back.
The only time I CTRL+Y-ed the final bosses was so that my PC could go toe-to-toe with Sarevok in a solo fight with no buffs from party members. I let him keep his Haste... well briefly. My PC was an Inquisitor, and he dispelled it shortly. Then I kicked a hole in his plate mail. Victory.
I did that fight the Elfman way, MANLY!

Easy way to kill Sarevok is to have a few of your characters (depending upon how many mages/bards you have in your group) use wands of paralyzation on him until he is immobile. Then hit him to death with ranged weapons (or even melee weapons depending upon the situation).
So I just managed to defeat Sarevok - and everyone else as it turned out - though it was pretty cheesy and needed alot of patience.
What happened was most of my party had been killed, but I kept Sarevok busy running after Jaheira and then Imoen, and my character ended up at the other end of the temple, facing Tavok and the evil mage. I decided I might as well try to take them out, which I managed to. I had cast a scroll of magic protection on myself, so the mage was basically neutered for my character, and had inbided (or rubbed on?) an oil of speed. The mage guy firing lighting bolts basically ended up killing everyone but him eventually. I had noticed that Sarevok didn't seem to be following me when Imoen died. After that, I just went and found him. Now this was the tedious part. With the oil of speed, I was as fast as him, and just to make matters worse, I'd ended up activating the Battle Horror traps. However, these guys turned out to be my pals, as if I could manuvour Sarevok so he was behind them, he often got slowed down for a moment. By pausing frequently I could easily dodge away - I think I got hit by the horrors twice. The only thing I was worried about was the oil of speed giving out - but luckily I had thought to bring two for my character. I basically just danced around him for about literally an hour and a half, pezzling him with crossbow bolts. As a gnome fighter/illusionist, I wasn't really tough enough to get the job done much quicker. However, it did amuse me that my character, who is an older lady gnome, kept taunting him with her usual battle cry "Death will come swiftly for you". I felt quite sorry for the poor guy.
In short - protection from magic scroll, and oil of speed, and he can't touch you. Just need to get Angelo killed somehow. So I don't think this is pure cheese, as it needs a bit of luck, a bit of thinking, a bit of experimentation, but poor Sarevok. Obviously, I did have ambitions for the rest of my party to survive, but I can always try again if I want.
Usually I use a wand of summoning too, but I noticed you said you didn't have one.
