You can play with one mage in your party, but I wouldn't recommand two mages.
There are many side quests available in chapter 3, just to get your characters powerful enough to beat bandit camp
Offensively, sleep works against 90% of the enemies in the game. When it doesn't work, you can use Hold Person, Emotion:Hopelessness, Web or Stinking Cloud. Also don't forget about the wands. There are very few enemies who can survive being carpet bombed with a Wand of Fire. Wand of Lightning also works well but you have to watch out for ricochet. You only really need to worry about Aec'Letec and Mustard Jellies.
By the time your party is full and averaging 3rd level or better, you ought to be good to take on just about any of the side quests and areas available (except for Tales of the Sword Coast areas like Ugoth's Beard and Durlag's Tower, maybe the areas on the far western coast).
Certainly by the time your party is averaging 5th level, you ought to be good for anything available to you besides Ugoth's Beard and Durlags Tower.
Lvl 6 can be easily reached without farming before even thinking of doing the bandit camp, if you do most of all those additional areas below Beregost. A few areas are a PITA (firewine dungeon) or are tricky (Lighthouse thanks to Sirens). Other encounters need some prep (Basilisk anyone?), but you can acquire crapton of gear....and money.
You could - maybe - kill a few Ankhegs for an additional set of super-armor, but that nulls Taerum to buy off any additional shells, once crafted. I've heard, that 4 Ankhegs always spawn on a certain overland-map ^^

I have a regular wand in my inventory. Should I give it to one of the mages? I'm using Xan and Edwin. I tried giving them a weapon it says they're proficient in.
You put wands in the quick slots like potions and you can recharge them by selling them and buying them back. That said what wand do you have? Almost all of them have uses other than the Wand of Missiles.
The tent encounter is a difficult one, so you have 2 options.
1. Go and do other side quests in order ot level you party up.
2. Trying a different strategy
You can try a different strategy either:
a. Bringing the enemy outside the tent. In this case you best way for surviving is to kill everyone outside the tent. Then prepare for the fight with the buffs that you need (potions, spells, etc). Then take the encounter out of the tent. Having some monster summoned by your side will help.
b. Fighting inside the tent. That depend on party composition and level, so I can be more specific you you tell them. Buff your party, expecially protecting you mages. As you get inside is all a matter of time. Kill the archer and the mage as fast as you can, try to charm someone. If you die, reload.
Anyway if this is the first playthrough I would also accept 2 mages dead, and then I would pay for resurrecting them. So the story go on and you don't get bored by myltiple reload.
I actually did a walkthrough with 2 mages and 1 sorcerer and it was really easy, I just blasted with spells everything and than finish it with 1-2 fighters.
It's never black or white, it's always a matter of strategy.
You will find more good characters in chapter 4., but as I said it is all a matter of strategy.
