Alternatively, you can use the Hold Undead spell. They have decent Magic Resistance and saving throws, but if you keep trying, it will trigger at some point.
Something that always helps is pulling each skeleton separately.
Finally, if nothing else helps, you can just use stealth or invisibility to sneak past them.
Otherwise, use try to use blunt attacks against them, following that, slashing or piercing. Avoid missile attacks (but if you do use them, try fire arrows). For a Mage, try Melf's Minute Meteors or, if you're high level enough, hit them with a couple of lower resistance spells so you can land some spells against them. A cleric or druid with level 5 spells could cast spell resistance on them, which will make it easier to use spells against them.
You should have fought them before, IIRC there are a couple either in Durlag's Tower or Degrodel's home.
Edit: You could also Mage tank them, with Stoneskin and/or Mirror Image, although you would need Protection from Cold vs. their ice arrows. Or you could use a scroll of Protection from Undead.
This is my method.
I have Imoen (she's my usual choice for a thief) go into stealth with her bow at the ready. I put the remainder of party back around the corner of the turn in the corridor. Everyone that can melee decently has a blunt weapon ready. Imoen sneaks up to just in sight of the first SW. She fires and immediately retreats (don't wait for the arrow to hit) back around the corner and far behind the melee crew. The arrow will only do minimal damage, but the SW will pursue her as its focus. It will turn the corner and run into the melee crew. It will still be armed with its bow (and will shoot at Imoen if she is close which is why I put her far back). The SW will waste a turn trying to go around and then change to its 2 handed sword. So the party gets at least one round of free swings. If you haste (spell or potion) the party, it is even better. Those bad at melee can still use missile weapons and help chip away. A couple of rounds and it gets pummeled to death. A bless spell also helps.
Heal up any damage. Repeat the same for number two.
Also I usually use invisibility on Imoen when beginning the maze and have her run through the entire maze, finding and disabling any traps before starting the passage.
Of course can use the same scroll on a more capable fighter and bash the undead at leisure...
Always use the right tool for the right job!
When your minions start dying, use the wand again. And again. And again. I took a screenshot of my own victory against Sarevok using this tactic. Victory lies atop a mountain of corpses.
Your wizard/bard may try to disble them with stinking cloud or web but it is far less effective.
If feel lucky may have each one party member to lob a potion of explosion as soon as the fight start: if win the initiative check could take down a bit of Sarevok's friends.
Also, are sure the fireballs come from the wizards and not from the traps? There are many, especially around Bhaal's symbol, and can not be disabled so beware
No, you use the wand before you even see your opponents. The minions will wander over to Sarevok and co and start attacking before you even move your characters. That way the minions get the fireballs while your party stays out of range. Once the wizard has exhausted his fireball spells, he can't cast any more.
Ooh, excellent point! I had forgotten about those. Stick to the edges of the room, not the Bhaal symbol in the middle. Here is the screenshot I was talking about - you an see some of the trap locations highlighted in red. And no, these can't be disarmed, and will trigger whenever someone - including the enemies - steps on them.

Yes, DnD has damage types, Many weapons work far better on some monsters verse others. For instance you need them to kill Ooze easier. Also Protection from undead, and all sorts of buffs and debuffs make most fights trivial.
It seems that there is no spell to protect from fire ball.
I tried to shoot with Mins and Safana dispel arrows, then 2 mages shoot magic missile at Angelo. The problem is that the mages have to keep summon monsters as Angelo wipes the floor with his fireballs.
Try wand of paralyzation and use any debuff you have at hand (blindness, nold monster/person, web, stinking cloud, chaos, etc...).
I get you have two mages, safana and minsc; who are the last two?
