Assets of the game
I guess many of you know that it is possible to extract game data with modder tools such as NearInfinity. The game is heavily modified and there are quite a few communities still active on the game. It's pretty amazing how much this game is still modified today.

On the other hand, surprisingly, I did not find a single correct wiki. I am looking for information about the game, about quests, about dialogues, texts and descriptions of objects. Is there a website that references all the texts of the game for example. This had to be done to help the translator communities, no?

I played Guild Wars at the time and remember that the Guild Wars wiki had all the quests in the game and all the dialogue. For Baldur's Gate, I guess you can't extract the game files and publish them. However, there must have been at least a site that lists all the screenshots of dialogue or something like that. Has it never been done?

Can you help me to find a Baldur's Gate ressource and assets website, or simply a good wiki?

The wiki does a pretty good job of it.

All the text is stored in the Dialog.TLK file. DLTCEP and NearInfinity are both good at reading individual parts of it.

But if you want to read ALL of it in a huge searchable list, the easiest way is with EEKeeper. Once you've set it up, go to...
View > Find Strings
Set Max Length to -1 and press Find. (It might take a while...)
Export List as CSV (It's like an Excel file)

You should now have a huge file that includes all dialog, descriptions, books, quests, etc. This is handy for finding out which text has a sound file attached to it.

The Wiki is generally good, and even includes back-story that never made it into the game. But it also has a lot of stubs. And some of it is not entirely helpful.
