and as for fighter i always go long sword and shield
For the main character, stay away from magic based classes, especially sorcerers, until you have a solid grasp on how to effectively use mages.
Really anything works, just some classes take a bit longer to shine.
For your first playthrough I'd avoid dual-classing unless you're willing to read some form of guide or faq (or know the ruleset well). Multiclassing on the other hand is extremely simple, which makes most of them a good choice - I personally love mage/thief and fighter/mage, but they all work well.

that was my Cavalier the first time I played the Enhanced Edition and I had a good and not too challenging time playing through BG1+2 with her.
True. It's something to be aware of - depends how much of the content you plan to play and whether or not you'll be taking the character into the next game.
The barbarian is just as good as a fighter in combat, but has the added benefit of RAGE, making you immune to mind effecting spells like fear or Rigid Thinking, which are quite powerful against a new player.
I'd recommend berserker for a first time player because you get free immunities to a lot of instant death effects.
That said, the game is totally fun and playable with any class. So go with what interests you the most.
