If you want to make your own mod to make your own items and/or adjust level cap there are some tutorials and links to other tutorials[gibberlings3.net] that may help you further.
If you're looking for an existing mod to adjust the level cap, there are numerous mods that include that option, for instance BG2Tweaks[www.gibberlings3.net] has a Change XP Cap option (despite the name, it is compatible with BGEE, I think it includes 2.1).
There's also one specifically for just that function here[forums.beamdog.com].

Secondly, if you like me were suckered into buying SoD, you'll need to download and run "Mod Merge", which can be found over on bd's forums. (Yes JB ... I'll remember to clarify that Mod Merge is not needed if you want to mod BGII ... it's only required if you have the steam or GoG versions of SoD installed on a BGI release.
Next, although not completely necessary I'd hunt down a current version of WeiDu (239 is the current release ... DO NOT use 239.01) and copy the WeiDu.exe into your game folder as well.
Thirdly, be careful of your install order, I'd personally use the "Big World Project" pdf as a guide for figuring out your own install order, but I'll post mine as an example as well.
My Install Order with a few notes.
-Mod Merge

It creates an old style Baldur configuration file, that after running the game I simply added .bak to the end of.
-BG1 Mini Quests

There is a very minor hot fix that you can apply in order to prevent the mod from blanking Imoen's bio.

Uses WeiDu 239.01, but is easy to simply trade the setup file with a 239 version.
-Stratagems
Requires several hot fixes in order to install everything. But is worth it .. you've never really played the BG Series if you haven't played it using Stratagems.
-Tweaks Anthology
-General Biffing
You probably don't really need General Biffing with my mod list, but if you decide to install the larger mods it really helps with performance issues. Just be aware that anything you .biff is nearly impossible to uninstall without simply starting with a fresh install.
-Multikit Builder
... A couple of other mods that I've messed with but don't use. ...
-Thalantyr Item Upgrade
Seems to work, but has a minor glitch where the Bag of Holding, ect that is added to Thalantyr's store by this mod uses random dialog from SoD as both name and description.
-High Level Abilities
Currently on my "do not install list" because it interferes with Stratagems and as I said, Baldurs Gate isn't really Baldurs Gate without Stratagems.
Notepad ++
Makes editing text files ALOT easiler.
NearInfinity
Useful if you want to "tweak" things here and there.
EEKeeper
The "go to" save editor, and there are times when you'll need to fix a "game state" in order to keep things working here and there. It also allows you to "fix" various NPCs, including changing classes, skills, profinities, spells, ect...
This is by default, as Fauxpas said, at ...\SteamApps\common\Baldur's Gate Enhanced Edition.
But to be sure, it's best to check for every mod seperately what the installation instructions are. You can either find those in a readme file or directly from the site where you downloaded them from.
You are running Windows?
You are undermining a good habit, which is, reading the readme file. If there is one, take note.
And if you take note, a lot of them will say that they want to be last in the list. Which can become problematic in deciding.
Having said that, Rev. Mustard, if you have quite a few mods you want to install, then you might be interested in Big World Setup[bitbucket.org].
This is an aggregator of sorts of the mods available. Its function is to give you a list of compatible mods which you can select or deselect and it will install the mods for you in the preferable order. It also gives you tips on components of mods that overlap and which to exclude in favour of another.
Aye, I totally agree, always read the Readme.
An alternative could be playing the game on the Story mode difficulty.
"unable to read the game resources", while the save directory is located in my documents (it might be left from the ol'good times, because I preorsered BGEE). I am completely lost on what to do, after over a decade of modding games I have absolutely no idea how to modify the saved game. Please help.
