How to use bastard sword with two hands?
It seems the character is only using one hand.

It's a one-handed weapon, according to BG wiki.

Guess it's just seen as a more damaging long sword for game purposes; I don't think BG uses the damage bonus for using a bastard sword 2 handed you get in the pen and paper rules.

Well the description is wrong - they are one handed weapons and that is the end of it.

The tweaks anthology mod allows you to create two handed versions of several 1 handed weapons if you really want to do that for some reason.

I don't think BG uses the damage bonus for using a bastard sword 2 handed you get in the pen and paper rules.
Correct; all you get is the potential +1 to damage and double crit range from the 2 handed proficiency (but you lose the ability to dual wield the weapon which is obviously much more useful)

Bastard sword is not a one-handed weapon, buddy. It's two-handed as it was mostly used by horsemen who couldn't afford to have longer blades. Literally almost all the fighting techniques with the sword use two hands. I know, because I've studied HEMA in Bastard sword specifically.

in a perfect version katanas and bastard swords should be usable in both fighting styles. similarly to how helberds can use piercing and slashing in the first game. "whichever is better", as it's written in the description.

Bastard swords aren't two-handed swords by design or by definition - they are called "hand-and-a-half swords" for a reason, because the longer grip makes it possible to wield them with two hands temporarily, but the blade may even be shorter than that of an ordinary one-handed long sword.

The answer to your question is:

Single Weapon Style

Simply equip a one handed weapon in a main hand slot and nothing in the off-hand slot.

You are now two handing bastard swords
Bastard Sword is a type of a long sword. Like 90% of the time it was used without shield and in battles after initial cavalry charge, in cities and condined spaces, or mostly in duels (especially during late Renaissance).

It’s a misconception that the second hand is there to aid your main one “sometimes” as some sort of an additional “feature”, it almost never comes off the pommel. Not no mention the fact that using Bastard sword with a shield is awkward at best and is a temporary measure for cavalry. The balance is off, you don’t have the control of the blade nearly as mach as you would for an arming sword.

Outside of mods like Tweaks Anthology you can't use bastard swords or katanas with both hands, regardless of how common it was to do such in real life. Speaking of real life, the longswords in the game should really be called arming swords, real longswords were mostly used two-handed, they could be used in one hand, especially with a shield, but due to their weight and balance, they were primarily two-handed. Bastard swords on the other hand, were basically between arming swords and longswords in weight, length, and balance and could effectively be used in one hand.
