Keep in mind that it is a party-based CRPG, and the socalled NPC companions contribute a lot to the fun. Through banter, inter-character quarrels, romances, personal quests, conversation, voice-acting (in BG1 for the new companions added by the EE). Some of it influences what main player character you would need to create. Such as a female in case you want male companions to start a romance. For example, Anomen/Sir Anomen in BG2, which is one of the more interesting characters.
Before the EE added the "Create Party" button, one had to abuse the multiplayer mode in order to start a game with multiple selfmade companions. With the help of the create party button, I particularly enjoyed playing with 2-3 player characters and using the free slots for story companions. That guarantees availability of specific classes within the party, perhaps including more than one dual-class characters if going with high attributes (Berserker13/Mage, Berserker>Cleric e.g.), and also makes it possible to skip story companions that don't make it past BG1 (Ajantis e.g, if interested in playing a female good-aligned paladin).
I particularly enjoy playing non-optimal characters, so consumables and spells like Strength make more of a difference.
As a sorcerer you will have a small selection of spells but you will have a lot of them to use. As Main char your STR, DEX and COS will be decent, so you will have a spellcaster that will resist for some time if attacked in melee, or ranged.
A pure fighter (melee or ranged) or a kit (i.e. berserker) have always their fun, since your high stats will make the difference.
Fighter/cleric works, and is pretty straight forward but not very fun.
and being a mage is about as fun as doing my taxes.
kensai/mage is pretty fun for an huge BG run (bg1+soa+bg2)
Bard Blade is pretty fun too: a combinations of spells, abilities, and 2wielder dps.
