Dyaneir starts out with Slings. Won't get another till level 6, give her Darts.
Anyways, here is what I usually do with those guys
Minsc: Two Handed Swords + Longbow
Khalid: Longbow + Longsword
Jaheira: Club + Sling
But you must equip Xzar with the gauntlets of ogre power, otherwise his thac0 is just too bad and he won't hit anything.
I don't mean to be rude, but you really need to start thinking for yourself. If someone told you that drinking battery acid would help you get all the fly hunnies, would you do that? I don't know you from Adam, but I'm hoping you're old enoug to do some basic maths.
Darts do 1D3 damage. They have a base attack per round of 3. that means, equpping a dart will lead you to 3-9 damage base. A Long sword only swings once per round, at 1D8, so you will only do 1-8 damage.
With the natural bonus APR, darts can make for some very power combos when enhanced by various abilities. A Wizard Slayer for instance, causes a stacking 25% casting failure per hit. If all 3 Darts hit, that leaves the target with a 75% chance of spell casting failure after the first round of combat, and a 100% once the next dart hits.
When interrupting a casting mage, you only need to deal some damage. 1 point is enough. Mages have very bad thaco. Once their spells are all spent, giving them darts and having them target enemy mages is a good way to keep that mage on lock down, since your mage gets 3 attacks to try and roll a hit instead of just the 1 with a sling.
Another example of how darts are usefull is if you're fighting a Mage who casts Mirror Image, or a Druid who casts Iron Skins. Both of those protections are based on number of hits they take before being removed. In order to remove them and kill the caster quickly, you want more hits instead of hard hits. It would only take 2 Rounds of a basic Dart user to remove the 6 Skins from a level 12 Druid.
As far as your other companions, read what I first responded to you with. The game gave them weapon pips. Use that as your guide.
That said, there's probably dozens of guides on the internet answering these questions from every possible angle, and lists of weapons available in the game.
Spears suck, clubs suck, I think there's only one particularly useful scimitar that you probably won't get on a good/neutral playthrough. Unless I'm forgetting something, I think everything else is a safe pick? Just don't have too many redundant proficiencies; like you probably don't want pips in 2h swords if you're planning to take Minsc and BooDorn. I think there's exactly one decent halberd.
If you look at Minsc, his 18:93 strength gives him a +2 to hit and +4 to damage, together with specialization he gets a +3 to hit and +6 damage which is only 2 more points of damage per hit than Khalid (and Khalid has a better AC and more HP). Once Khalid gets his strength buffed (or in SoD where he can get grand mastery), Khalid is a lot better than Minsc.
With Minsc I tend to have to have him use bows or dual wield maces. He has enough proficiency points for mastery in dual wield and specialization in maces. Since he does have a nice bonus to damage, its better to have him getting 3 attacks at 1d6+6 (28.5 damage on average) with maces as opposed to two attacks at 1d10+6 (23 damage on average) with a zweihander. Zwiehanders do have a better enhancement bonus, but dual maces are still ahead.
With weapons, scimitars are good if you're dual wielding since you can get two +2 scimitars (Cloakwood and Durlag's tower). Scimitars, daggers and short swords are the only melee weapons in BG where there is more than 1 weapon with a higher than +1 enhancement bonus. If you kill Drizzt you can also get his very good +3 scimitars. They're also good in BG2 since two of the three bonus attack weapons are Scimitars.
And darts suck, they're an okay choice for a Mage since Mages have pretty limitted ranged choices (knife, dart, and sling). Although throwing knives are still better if you can get a strength bonus to damage 2x(1d4+2) (9 on average) vs. 3x1d3 (6 on average). The problem with darts is the low damage coupled with a lack of good enhancements (no darts of fire/ice/acid like arrows). Darts of biting are your best option but there's a save to avoid the poison and many enemies are immune to the effect. Still, there are some uses like breaking stoneskins and images, but against those enemies you'll probably be spell casting instead of using autoattacks.
Jaheira is much more appealing as a single woman :) - I enjoy scimitar/shield for her.
