I think he means catholic as in "universal/unified/generalised" ...that's what the word catholic (Greeck) means aside from that other thing... as in "have all the demons have a somewhat similar style". (I'm sure a native Greeck speaker will correct this thoroughly)
Or he could be reffering to actual roman catholic iconography and it's style, much like Warhammer fantasy/40K implement those overtones into their artwork.
Ok so to the meat of the post, I sort of understand where you're coming from. Yes the revenant does look a little goofy and it moves oddly. That said.
If you look at the Imp, the former humans, the pinkies,...all doom 1 demons,...they all look goofy. Or at the very least Cartoony. They all look cartoony because of the pixelation, the way they made this artwork.
The movement, same problem, they only had X amount of frames to work with (I don't know if that's a choice or a limitation or whatever, but they did what they did). And it looks "off". You'll notice that with most sprite based animations in video games around that time, or much later even. They're not very fluid and they gotta portray a certain motion, it's gonna jump, it's gonna be blocky....having a tall skeleton walk around is gonna show that really quickly.
The only thing that's left is, you think you can do better? Have a crack at it.
Plenty of people have tried to remake the entire roster in some form with varying degrees of succes.
Besides the silly dance looking animations the Revenant is still fitting to the look of Doom. A cybernetic amalgamation of bone and gore.
Also funny you mention X-files because the Archvile has a X-Files/MiB themed skin in Doom Eternal, a real shame most of the cosmetics were joke/meme skins though.

And the whole Catholic thing is me saying traditional horned demons. I could just say biblical. But ideas of demons are different. Even creepy dark shadows would fit more than here's crypt keeper, here's mar attacks.
Enemies make a game for me you can't just put anything in a game and cool. Not if it don't fit, that's my belief why I like q2 strogg are actually cool . Just don't like these guys they ain't even close to demon.
That's funny, considering the amount of games that rely on the products of Catholic culture is incredibly vast.
Whenever you see a Gothic cathedral in a game... that's catholicism.
Anyway, to answer the OP: those mosters are popular because their design is immensely cool. Doom has the best bestiary of any shooter ever made in my opinion.
