The Ultimate Doom contains all these plus a new fourth episode called; Thy Flesh Consumed.
So it is basically an updated version of Doom.
But yes, that's the only difference between the original and Ultimate Doom. Doom II is obviously the sequel, while both Final Doom and the Master Levels for Doom II are fan-made maps. They were officially released by id software, so I guess they're technically add-ons for Doom II, rather than mere community made maps q:
How come DOOM 3 isn't worth it?
Doom 3 is more of a survival horror that relies on constant jump scares. It's alright, but it's nothing like the original fast paced shooters. Also, Doom 3's guns feel weak and ineffective for the most part, although I do love its version of the Plasma Rifle. The gun's reload and firing sound effects are used in a fair few Doom 2 mods today.
In DOOM Shareware you only get the first episode.
As for Doom 3, I love its atmosphere. I find it's best played in the dark with high quality headphones to pick up the sonic ambience. I did mod the weapons a little. I never liked the shotgun pattern so I tightened it up and reduced the overall damage to bring it more in line with the original Doom shotgun behavior. I also sped up the plasma projectile velocity to 825 units/sec to match the original Doom plasma and the gun feels better.
And after you finish all that play Doom 2016 because its less like doom 3 and more like doom 1 and 2
