looking for some map wads for Guncaster can't seem to find a good one for it outside of Sunder and Scythe

Ah well, I don't know if you like them; they're the ones I play the most because they don't represent the "classical" Doom maps which I can't stand anymore. I played vanilla Doom way too often to appreciate the look and feel of the old maps. Yes, they are genius but graphci wise they didn't age well.

Which mods are you using?

I tried to spice the vanilla maps up a bit using the "Ultimate Doom Visor" mod which adds fog, lights and industrial ambient music. Slowed down the walking speed and added the "Project Brutality" mod also helped a little.

But take those mods in combination with the "Hell on Earth Starterpack" and you're ready to go.

Project Brutal Guncaster is what I mostly play anymore

The Hell on Earth Starterpack is a great place to start. Alternatively, you could play Hellbound or Going Down, both map packs with a decent amount of realism. Hellbound gets quite slaughtery, but since you've played Sunder it should be no problem. Still on the realism scale is Revolution!. This is much more of a cakewalk compared to the previous, but it has a lot of cool locations, such as a movie theater, a train, a beach resort, the inside of a worm, and Egypt. Speaking of Egypt, Epic 2 is probably the definitive map pack for that setting, flip-flopping between ancient Egyptian tombs, alien spaceships, various celestial locations, and eventually to a gothic cathedral. Also gets slaughtery, lagged like crap with Brutal Doom. For a more classic experience, you can't go wrong with Whispers of Satan, or 2002: A Doom Odyssey if you want to go back to Doom 1.

Tried Revolution!.
Well, it's underwhelming. For somebody spoiled from Sunlust, Back to Saturn X and Valiant, this one was bland and "boxy". Maybe it's because of the age - but I forced myself through the game until level 12 and then I just stopped.

Well if you hate boxiness try Knee Deep in ZDoom. It's so non-boxy it makes me feel sick. No really, it gives me motion sickness for some reason.

Kind of. It has tons of enemies, but it's beatable.

Also, it boasts some absolutely A+ level design, the map looks great. Don't try to play it with Brutal Doom/Project Brutality, the games framerate will dip into the singel digits.
