You want to mine a WHOLE mountain down? You crazy dwarf you. Well, I suppose you can use the landscape task, starting at the very top and slowly working your way down. :)
Otherwise, quarries will dig a hole into the ground.
Tunnel will dig a tunnel straight, up or down into a mountain/the ground (when you set down a tunnel task, at the bottom right is an arrow you can use to decide whether you are tunneling up or down or straight - so you can use the tunnel task to tunnel into the ground too.)
The landscape task will "flatten" a terrain by placing or removing ground, depending on how you setup the task.

Ps: The thing is that i want to get my stone without "destroying" the nice landscape - so instead of digging a large hole for stone i want to dig a mountain/hill (im not even sure how much im gonna need)
It kinda is a workaround (not digging the mountain but making him collapse) but even saves time compared to mining him down;

I sometimes wished the voxel dirt blocks slowly break into rocks if a portion of the terrain collapses, instead of instantly collapsing rocks. Maybe an option to tweak how fast it collapses?
Yes, the pic some posts up shows that; Only make sure to clean everything up before the rocks vanish
