My guys won't construct Knights or Archers

I have the weapon rack, work bench, forge and I have stock pile of wood, gems, iron, stone etc yet these idiots will simply not craft either archer or knight gear. Which means I can't stay alive long enough to actually do anything. HOW THE ♥♥♥♥ do you build this ♥♥♥♥?!??!!? Why is it so frickin complicated??

The game is complicated because the game was made by programmers and not game players.

Hold right click on the forge and make some ingots.
Hold right click on the workbench and queue some knight/archer kits.

you also need to harvest plants for the material for the archer gear

All games are made by programmers. It's just this game has a radically different control schemes than what most players are used to.

Select your guys, and right click on the weapons rack (if you don't have one, build one. You'll need one for each unit type).

BrickTheGrim, like the others have said, you'll need ingots for knight kits.
