Iron Man mode usually means that you have to finish the game in one life. You can save normally but your savegames of that iron man mode get deleted/inaccessible the second your character died ONCE in that mode. In short, you have one life, dying prompts a full restart from the beginning of the game.
The original offered the same approach to NG+ runs. I felt the same way with it as you're describing here.
The biggest difference is the original game was fun and interesting, whereas FMF2 is bland and annoying. I'm legitimately struggling to finish FMF2 because it's just so "blah" by comparison.
