I always and only play Career.
I start with Caterham to make it challenging, obviously haven't got on the podium yet but i notice the understeer is dreadful, even with high downforce its really poor.
I tried a "Grand Prix" Race with Mercedes to see if i was just s**t and well, i finished with +34secs ahead of 2nd place and the steering on the AMG was perfect. So, may be the car you use.
Just a suggestion
The cars have less aero grip than they did last year, so pretty much everything will feel understeery compared to 2013. It's also a lot easier to spin the wheels this year.
I noticed that in tight hairpins you can turn way tighter by giving a little more gas than you think you should, it'll light up the rears and push your nose around a bit. Bad on tires tho.
