Disclaimer: I am playing not in english, so some words aren't accurate, sorry for this.
1. Use the community patch. It fixes many bugs, unfinished questlines, memory leaks and so on. It implements many things that have been just left commented out in the code of the game, hell you'll even here some new lines from the chars, which might have been considered as too harsh, so they have been muted...
In short, there is no reason to not use this patch if you play Sacred 2 on a serious base.
2. I would advice to install the Enhaced Edition Mod. It makes the game _harder_, which isn't in your interest right now (champions become tougher, endbosses getting new skills...). But it is based on community experience and changes or even replaces Combat Arts of the chars. The Shadow Warrior for examples gets 1 more skeleton in the Nether Alligiance and gets an extra cold aura buff instead of his invisibility combat art.
Both can be found at darkmatters.org.
And now directly to your questions...
Hit chances:
Basicly, you'll never get 100% Chance to hit on Champions and Bosses. Well, at least I didn't, and especially not at strong ones. On gold mode I dropped to 31% chance to hit against a rat champion with a mixed Shadow Warrior xD (mixed = half damage from bow, half from combat arts, so not fully developed to be archer only).
Don't rely on Sword Weapons or similar skills too much. Use especially rings and other equipment with "- enemy chance to evade" and "+ chance of true hit", this will greatly boost your chance to hit.
(You might check it in the character menu at the bottom, the shown % there alters accordingly to your equip chances, so you can see the changes of hit % to your last enemy.)
Chance to be hit:
I actually don't care, so this is mostly knowledge from others. There is a skill called "Combat Reflexes", wich directly rises your chance to dodge. If you keep this skills high, you can easyly get a 50% chance to dodge, plus there are items, especially shoes and amuletts, with "+ chance to evade".
Chance to be hit is determined by your defense value, so equipping a shield and getting Shield Lore helps a lot.
But like the fact you'll never get 100% chance to hit against hard bosses, hard bosses with almost always hit you... and the hardest hits are from magic like lightning or critical hits. That's why I for one don't care about chances to be hit.
Sturdyness:
Sacred 2 is one of the few games where you actually don't stand a chance as Glass Canon, but defense is more important.
Armor Lore is very important, since it rises all damage resistance on all channels (fire, ice, magic, poison, physic).
Armor Lore combines well with Toughness, which provides a flat bonus to all channels of damage as well as a certain % of damage reduction to all.
But Constitution is my second choice next to Armor Lore, since your hit points are the onliest which helps you against alle kind of damage. Plus, on level 75 (where the mastery of skills do unlock), Constitution enables LifeReg in battle. Basicly, as fast as you heal out of battle, you'll permanently heal, even in battle. That greatly improves your survivability, since you might ignore damage from small foes like goblins completely.
Damage of enemies:
Later on, your problem will be critical hits. There are two skills, Combat Reflexes and Spell Resistance. Both reduce the enemy chance for critical hits... but never reduce it to zero. So... I tend to go heavy on hit points and resistance to survive this rather than dodging it.
Some friends do the exact opposit and we can't understand each other in that point. xD So both is doable, somehow.
Your Resistance against damage:
It might be obvious, but there are 5 channels of damage. The most frequent damage is physical one. The other depends on enemies. Mostly, they do one elemental damage. Poison, magic, ice or fire. You can switch your reliques accordingly.
Problematic are two things: None mixed damage and multi-damage.
You are almost always guarded against physic + one other elemental. That means, enemies with pure physic damage like orcs or animals will be a pain later on, since all of there damage will go against a single resistance.
Example:
Enemy does 50 physic and 50 poison. You block 25 physic and 25 poison, thus getting 50 damage overall (25 physic and 25 poison). Next enemy will do 100 physic damage. You'll get 75 points of damage.
Both enemies do 100 damage all in all, but pure damage is just blocked by one resistance, thus 50% more damage to you (75 instead of 50). This will be really bad later on platin and niob.
And, of course, enemies with multiple damages... some bosses do all 5 channels of damage simultaniously. You can't really prepare for that well.
Therfore, keep a look out for equipment with multiple resistances. The Star of Artmark is an amuelt I'll never throw away, it provides resistance on all channels.
All in all.... you'll loose this heroe too. Just too few defense skills. Skills like Alchemy and Enhanced Perception are fun, but no help at all later on.
You should have one high skill in doing damage (as high as your level) and on skills almost as high in defense (like Constitution), and some lesser in defense as well.
Armor lore is generally my choice for going... like when on level 125, I have 125 Tactics Lore, 100 Armor Lore and Constitution on 75 (since 75 unlocks the mastery with regeneration in fight).
Yeah, that means some skills just stay at level 1, just like concentration.
And do more damage... Tactics Lore 18 won't get you far, I am afraid. ^^
As for deities:If you don't want to use Divine Devotion, take Kybelle or Forens. Their powers improve with player level. Testas damage scales greatly with Divine Devotion and is almost useless without it.
Last thing:
"Is in the game exist some death traps that can reduce HP to zero instantly?"
I thought so, too, but no. It is just hard.
Try to not get sourrounded, since this lowers your defense value. (You'll get more easy to hit, witch kind of makes sense being sourrounded.)
Watch out for enemy strong moves. The more the attack is visible, the harder it hits. For example giants hauling rocks or that ♥♥♥♥♥♥♥♥ firetrap (the enemy throws something shiny red at you, then you have an whirling red mist around your feet... this thing does fire damage harder than a kick from satans hoofs).
Champions, especially with Enhanced Edition Mod, do a crazy amount of damage with critical hits and have a good chance to do critical hits. Look out for ranged ones. Later on you will face several champions at once, and if more of them should land a critical... well... your dead.
Sacred 2 starts as a very easy game and gets pretty hard with time. You can die if you don't see that firetrap within seconds. So if you are surrounded, some effects are flashing and you are not concentrated, it might seem something just oneshotted you out of nowhere. I know that feeling. But there is nothing that can reduce your HP to zero besides hits who do more damage than you can endure.
Well... hope that helps and doesn't discourage you. ^^
I have read for community patches on darkmatter forum, it's look cool and making a zillion of changes and fixes but the point is it seems have no use with the old characters, which is by default deleting my primary objective to save ma hero. I have explored every meter of game map on the all passed location, even maneged to find some easter eggs (I think there was an aliens and cave with some stuff), and now this patch says me to begin from a scratch, nah...
For me vanila is not so bad, only one thing that bothered me was a camera but after making it like in Sacred 1 it's fine. :) Also I have faced some quests which cannot be complited, for an example cannot finish quest in mine after killing a vampire and obtain a reward, but still my hero saved thos poor souls so it's not so bad. :) Actually I think only few percents of quests in game are not working.
For now, thanks to you, I will focus on the Armory Lore and such stuff, I will hope my step-by-step exploration and a megatons of defeated mosters gaves to my hero some upper hand in level (usually my knight at least is in a few levels more than a hightest lvl mosnter in the current location) to survive on hightest difficulties.
Probably will not explore the whole map again, and it will be boring to complete the same main quest of saving Arcania, but to help anyone who need it regardless where they or who they, to save the world again is never boring. :P
It's not a game like Sacred: Underworld and Sacred 2 at all.
As for levels, the highest one is Niobium, ending at lvl 216, if not mistaken.
As for the problems you encountered; one of the most imporant things in this game are your resistances, which you can improve by using the orbs you occasionally find.
Some players like to mix them up to have defences against three resistances in case you encounter a monster doing one or two types of dmg other than physical.
Other's like to keep a full stock of 3 orbs at one resistance and switch those using a hotkey depending at what they encounter.
If I'm not mistaken about the Fen-fires, they're doing magical and frost damage, although only the frost damage is shown when hoovering over them.
Magical damage reduces your resistance to other damages, so it may be a good idea to set up a set of 1-2 magic orbs combined with 1-2 frost orbs to boost those resistances.
Thorin :)
Resistance is a huge problem, it is a very hard sometimes to switch them in time, but I can speak only about Silver and up to 76th lvl, if you know mosnter you can pick effective resistance: for an example Dryad Island, there is a lot of meele combatants like a Blood Dryades with teleport and weak fire damage, and the magician Blood Dryad Shamans with a strong poision damage, damage over time and root, so me just picking anti-poision relics and don't bother myself about fire foes.
In general, the most dangerous opponents in this game that my hero faced was with a magical attacks like those wisps or something, and of course damage over time or freezing, roots, etc is a annoying too, all of those things mages can do. Root and firetrap is suppose to be a fearsome combo! Don't know why, but the arcane damage to my zombie knight even with all of those resists is still a pretty high comparing to other. It's annoying. Especially it's dangerous when facing arcane and some other high damage foe, like a yellow Blood Dryad Shaman and yellow Fen Fire.
About mixing relics — well it's too dangerous on hardcore mode I think so, the foe with a high specific perma damage is far more dangerous then ten foes with a different kind of low damage or the mixed one. At least for the knight which fighting in the close combat.
Besides the last boss on Dryad Island was a really weak, so I hope Gold will be not much difficult too...
Question: What a better to do after all locations Dryad Island included is fully cleared and explored, just go to the this new bonus location such as Cursed Forest, or finish exploring Westelands?
I will make somekind of mini-guide without spoilers for a hardcore difficulty setup after finish this game! :P
"Magical damage reduces your resistance to other damages, so it may be a good idea to set up a set of 1-2 magic orbs combined with 1-2 frost orbs to boost those resistances." — Itneresting, should try it somewhere.
P. S. What is mean "Thorin"?
--- added some time later ---
Oh my gosh! :(
I have accidentaly finished the campaign before explored those two new location that has been added in Ice & Blood. Just was to enjoyed of the battle with that metal junk foes, the last one was really annoying!

(the picture has contain some spoiler)
As said before by the users, the critical strike is matter! Where my head was when I have not picked up Toughness. :(
Well, from the other side there will be some interest to play on Gold due to the unexplored stuff, maybe I should left some locations for the Platium or Niobium too... The Gold awaits! My noble zombie knight along with his two loyal skeletal servants is continue it's mission to save the every innocent soul in Ancaria! :P
- You should always have important skills at character level for them to be mastered by level 75, which unlocks new bonuses.
- Armor Lore, Constitution, Toughness, Spell Resistance, Shield Lore (depending on the build) for defence, Tactics Lore, Combat Discipline, Ancient Magic for offence, all are important skills.
- General skills (green ones) should either be at character level or not used at all.
- Combat Reflexes only lets you avoid crits from weapon hits, not magical hits. Spell Resistance is best for magical hits.
- Chance to hit and to be hit depends on the kind of attack and some different stats. If it's a weapon hit defense/attack values, chance to hit/evade and so on are indicated. Higher values improve your chances of surviving either by not being hit or by killing your enemies faster. If it's a magical hit then it's spell resistance/spell intensity.
- If you're playing with a SW take a few pieces of the Armantin's Legacy set until you have the +Armor bonus. Max out Armor Lore and Thoughness and you'll see your armor levels really high on all channels. It helps a lot against multi-damage and is a great strategy for being well protected at all times.
- For a SW master Concentration and use all three buffs. Nether Allegiance is cool for the skeletons but Grim Resilience increases your HP and spell resistance via the Willpower bonus. Reflective Emanation reflects all damage caused to you. Combined with Constitution and Toughness you're pretty much invincible.
If you want to play Hardcore I'd say create a new SW and master Armor Lore, Concentration, Toughness, Constitution, Tactics Lore as fast as you can. Use all three buffs and pick at least the pieces on Armantin's Legacy for the +Armor bonus. For the rest use set pieces that give you +All Skills bonuses. Forget the general skills and use the Focus skills. If your plan is playing Astral Lord then be aware that you're a "magician" and as such you need the Lore skill and Ancient Magic, and that changes your build a lot.
And last but not least, have fun.
For now Gold is much more easier than Silver was, don't know why is that so. My hero is in a full of Armantin's Armor set almost of his level, and I have lot of items from the other sets. A few questions:
— How to gain faster experience without clearing again a whole map? Me want my zombi will be at least one or two level bigger than highest lvl foe in current location, from my game experience it's matters.
— What location is easier in Ice & Blood addon (so what of I will play first), the Seraphim's Hunting Grounds or the Cursed Forest? I have an idea to left one of this location for the Platium and the second one for the Niobium :)
Well I think after full cleansing of the map almost twice, the first attemp was a dead now Dragomage, my zombie will survive somehowe to the Niobium, at least I hope so... As to be said, chance to hit almost no reduced in Gold, but still need to increase because the all of damage my hero is doing in meele combat.
Creating new hero is not a variant!
This is ma crazy zombie knight stats :)

I cannot replace the already picked skills, so will fight with what I have got. Due to advices I will spent points into Armor Lore and such stuff. Almost never using active range damage skills from Astral Lord, but in the most dire battles sometimes using Skeleton Tower and thos scream which is increasing damage.
The Crystal Planes are much easier than the Cursed Forest, but Narnuil is one of the hardest bosses in the game so be careful with that one. The best way to gain experience faster is to grind at the Swamp with Mentor potions.
Actually you can replace your skills with the Character Editor, but keep a backup of your saves anyway: http://www.nexusmods.com/sacred2/mods/2/?
Okay, I have got it, first those north-west location but beware of the boss. Well it's actually a fun to play with the whole map and 99% of dungeons previously explored, just focusing on the side quests (by default I am trying to complete all of them) and don't bothering myself by methodical cleansing of the area, which is sometimes hard and long.
Nah, editor is a cheat, no way, I am not a cheater.
I have a file with blank level 75 toons with Niobium access on DarkMatters' Download section, where you can allocate all skills and sttribute points in order to run tests at mastery level. If you want you can try those and see the pratical differences between choosing different skills. It's worth a shot.
— Is there any way to obtain a lot of Mentor Potions? Like a exchange some other kind of potions in same way as runes? Because have faced a shortage of it on Gold already.
— I am remembered that in my Silver walktrough I have found some kind of mini bosses the battles with them was fun and enjoyable but also some of my heroes fallen in that battles before at last zombie knight was choosen. :(
Is there quests on most of them or I need to search by myself again? If I need to search by myself better will download somekind of map, because again a week of gameplay time... No way.
But I don't know what you want... leveling faster? Enemies below you level will always give only few experience points. Enemies above your level will give more experience points.
Most mini-bosses have quests but some are only "get there, kill it". There's this map which helps a lot: http://www.sacredwiki.org/index.php/Sacred_2:Map_of_Ancaria
Remember, when in doubt Sacred Wiki and DarkMatters are you bffs. ;)

(spoiler warning)
remembered on my last walktroigh I have discovered that location late in game and there monster where all below almost 20 levels of my char... Anyway, fully explored it.
So I will up Alchemy! And okay, I have read from the darkmatter forum something already. With the map I will find and defeat that enemies again. :P
With the entire map uncovered you should be able to do that and collect some more xp.
Quest got 2 trigger points. First is in the swamp above some plateau, the other one at the Dryad island where you need to move a lever. After that, return to the swamp to talk to the quest giver and do the quest.
And as for using "Thorin :) " my online profile for many games is Thorinoakshield. So I use "Thorin :) " as an autograph for my posts.
Thorin :)

As you can see, this one is level 111, died zero times and the enemies are 14 level above. All in all the time counted in Sacred 2 for this char is 1 day and 14 hours.
I post this because I want to say to you that you can achieve your goal (highest difficulty without dying) faster than by grinding enemies in order to stay some levels above them.
