You may experience crashes on PC if you're going to play on Windows 7-10. Blood Omen 2 and Defiance work pretty well on newer systems, though BO2 likes to crash occasionally. Remeber that crashes will be painful due to SR2's saving system - much like in the original BO, you can save the game only in the designated places (getting to which, if you haven't played the game yet, can take you even two hours).
I'd recommend you get SR2 for PS2 as that way you get access to bonus content (you have to beat the game to get the code that unlocks it) and lower the risk of experiencing a crash. You should buy BO2 and Defiance for whatever system that suits you best - they're basically the same games. European version of Defiance had bonus content cut from it, which, I think, was later restored in some German edition. Not sure, if it's on PC, though. Again, if you buy Defiance on gog, you will get some of the bonus content included in the US release.
Have fun, whichever version you decide to buy. :}
