Fruit doesn't matter any. Value doesn't change, and they offer the same nourishment value when eaten or turned into Wine. Not sure if Grapes have any different growing times, but I believe they're mostly for having a more diverse food production to help you control and know what your Gnomes make.
Is also reflected in me having a pine-only stockpile at the furnace
So when designating groves, the only point in growing pine would be to keep my kingdom worth low?
Apple or orange, but not both. Just depends on what is near my drink crafting station, since for time's sake, I usually like to create groves in areas that are partially growing the desired tree already

No strawberries or grapes
Occasionally mushrooms but not a priority if I don't have an easy underground water access. I usually do this in year 2 or 3 when my farmer gnomes have become so fast at farming that they can easily handle more work, as well as having high supply of wheat available for all the animals already.
Forward-thinking, might be a good idea to grow as much of a variety as possible just to be safe (is it really that much work for you?). Just throw all your pine into coal and use birch for your furniture, that way coal doesn't hit your furniture stock. Or make a single fruit on "repeat" for making wine.
